Toasted Pumpkin Seeds

High in zinc, magnesium and other minerals, a little protein and fiber, toasted olive oil pumpkin seeds are an awesome snack alone or paired with a piece of fruit. They are better tasting, more affordable, and better quality than anything you can find in the store.

Source organic raw pumpkin seeds from the refrigerated section of Natural Grocers or wherever you can find high quality seeds. Ideally soak and dehydrate them ahead of time.


To make:


  1. Pour enough raw pumpkin seeds to cover the bottom of a pan.

  2. Drizzle with a little high quality olive oil to coat the seeds. My favorite olive oil these days is Braggs or my local favorite sourced from Greece is Health Harvest, also available all year-round at the Boulder Online Farmers Market.

  3. Turn the heat on low and gently toast for around 15 minutes, stirring every few minutes until slightly golden brown.

  4. Remove from the heat and generously sprinkle with your favorite sea salt. My favorite these days is Jacobsen Salt from the Oregon Coast.



Enjoy as a snack or topping to your favorite salad or soup.
