Herbed Tomato Salad
Fresh tomatoes are one of those vegetables that shine only in the summer months. Paired with fresh garlic and herbs, this summer salad delights the senses and nourishes the body.

Fresh herbs like cilantro, parsley, basil, dill, rosemary and thyme are easy ways to not only add a punch of freshness to every dish, but also nutrient density. I typically buy 3 bunches of fresh herbs each week from a vendor at the farmers market. Rosemary and thyme are best cooked with, not added fresh to dishes. I sauté my ground beef or lamb with rosemary or thyme and top my sweet potatoes, tomatoes, rice, soup, etc. with a handful of fresh basil, dill, parsley or cilantro.
Pair this fresh tomato salad with baked chicken and saffron rice, with ground beef and a roasted white sweet potato or alongside whatever you choose.

Ingredients:
A couple handfuls of cherry tomatoes chopped in half (around a cup)
2 small garlic cloves chopped
1/2 large or 1 small organic lemon juiced
2 handfuls fresh herbs chopped - I used cilantro and dill this week
Salt each layer and at the end to taste
Instructions:
In a small bowl add the juice of the lemon with a pinch of salt. Add the chopped tomatoes and garlic with a pinch of salt. Then add the fresh chopped herbs and stir to combine. Add salt at the end to taste.
