Elderberry Syrup
Elderberry Syrup is a classic remedy to prevent and fight off colds and flus. It can be taken daily as an immune tonic or multiples times per day during an acute infection. There are many over the counter elderberry syrups available that are pretty expensive and use cane sugar —- this recipe is quite inexpensive and is sweetened with local honey for additional medicinal benefits. Elderberries have also been used historically to treat painful muscles and joints — likely because they contain high amounts of vitamin C and other anti-inflammatory flavonoids.

Did I mention elderberry syrup also tastes great which makes it easy for kids to consume? I enjoy mine in the winter with sparkling water as a mocktail or use it as a base to make elderberry gummies with grass-fed gelatin. It can also be taken by the spoonful. Regardless of how you utilize it, Elderberry Syrup is a great way to support your well being and immune system this winter. It also makes a wonderful gift to support those you love.

Ingredients:
1/2 cup dried elderberries —- I get mine in the bulk herb and spice aisle of Natural Grocers.
2 cups spring or filtered water
1 small nob of ginger - about 1 inch or 1 cinnamon stick
1 lemon
1/4-1/2 cup honey
Mason jar or any glass container, I used an 8 oz bottle from Rebecca's Herbs.
Instructions:
In a small sauce pot add the water, elderberries and cinnamon or ginger. Bring to a boil, then reduce the heat to a simmer for 30-40 minutes until the liquid reduces by half. Leave the lid off. Once you have around 1 cup of liquid, remove from the heat and put a lid on it. Allow it to sit for an additional 30 minutes to further extract the medicinal properties. Pour through a fine mesh strainer or cheesecloth. Add the zest and juice of one lemon. Add 1/4-1/2 cup of honey and stir well to combine. The more honey you use, the longer the shelf life. Store in the refrigerator in a glass jar for 1-2 months. Enjoy 1 tsp as a daily tonic or 1 tablespoon multiple times per day during an acute infection. Cut the dose in 1/2 for children.
